Protein Potluck Special

Comfort food for the whole party! Whether for your family or made as a dish to go, this high-protein meal is the whole package.


1 pound lentils

1 bay leaf

1 tablespoon extra virgin olive oil

1 cup finely chopped onion

1 green bell pepper, diced

2 carrots, finely chopped

3 Roma tomatoes, diced

1 teaspoon paprika

1 teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon coconut sugar

½ teaspoon salt

2 Slow Cooker Versatile Seitan Balls, cubed


1. Place the lentils and bay leaf in a large saucepan and cook according to package directions.

2. While the lentils are cooking, heat the oil over medium-high heat in a very large skillet. Add the onions and bell pepper and sauté for 10 minutes. Add the remaining ingredients and sauté for 5 minutes. Add the lentils, stir, and cook for 5 minutes to heat through.
