Yields 10 bites
These Five-Ingredient Peanut Butter Bites are quick to throw together and great to have on hand for easy weekday morning snacks.
1 teaspoon canola or vegetable oil (for greasing)
½ cup raisins
1 cup hot water
2 ripe bananas
1 cup peanut butter (creamy or chunky)
⅔ cup old-fashioned rolled oats
Optional Additions:
⅓ cup raisins or dried cranberries added after step 4
1.Preheat the oven to 350 degrees, and lightly grease a muffin tin.
2.Put the raisins in the hot water for 2 minutes to soften, then drain the water.
3.In a food processor or high-powered blender, blend the softened raisins, bananas, peanut butter, and oats for 1 minute or until smooth.
4.Spoon the batter into the muffin tin, filling each cup halfway.
5.Bake for 18 to 20 minutes or until the bites are golden.
