Cornbread

Serves: 10 Preparation time: 15 minutes / Cooking time: 23 minutes
Ingredients
1 cup yellow cornmeal
¼ cup white sugar
½ teaspoon baking soda
2 large eggs
¼ cup honey
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 cup buttermilk
½ cup butter, melted and cooled slightly
Directions
1. Preheat oven to 400 degrees F. Place a 9-inch square baking pan in the oven to heat
up.
2. In a large bowl, mix together cornmeal, flour, brown sugar, baking powder, baking
soda and salt. With a wooden spoon, create a well in the middle of flour mixture. Add
eggs, buttermilk and honey and mix until well blended. Add butter and mix until just
blended.
3. Carefully, place the mixture into heated pan evenly.
4. Bake for about 20-23 minutes or until a skewer inserted in the center of loaf comes
out clean.
5. Remove from the oven and place onto wire rack to cool for about 10 minutes before
serving. Cut into desired-sized pieces and serve.
